2018 Chardonnay - Adelaide Hills SA
We met winemaker Michael Corbett about 7 years ago and was instantly drawn to his enthusiasm and friendly nature. His considered, modern takes on single vineyard McLaren Vale and Adelaide Hills wine are honest and super engaging, and his take on Chardonnay is brilliant.
The fruit for this wine was foot crushed and left to sit on skins for 6 hours before being whole bunch pressed to tank with natural ferment getting a start before being moved into both a larger Slovenian foudre and old barriques. It has then been left on lees for 11 months then racked and bottled unfined and unfiltered.
So after that what is there? A precise, modern take on Chardonnay that trades heavy oak and buttery-ness for clear complexity and finesse. There’s plenty of layers here and also plenty of length. This is a wine that even though it is restrained it still has power, it just happens to talk instead of shout.
