Winemaker John Harris refers to 2011 as extremely challenging. It was a year with cold, wet conditions that has produced a wine, that with time, has become something really special. For the Sabre wines the fruit is always blended from two regions to deliver elegance, complexity, and power. For the exceptional Late Disgorged, expect cracked wheat, brioche, and roasted nuts adding savoury depth that balances the acid beautifully. Sitting at $125, it is no doubt a premium Australian sparkling - but you’ll struggle to find any import at this price point that comes close to its quality.
